Healthy Pumpkin Crepes

I know. I know.

I wasn’t going to make pumpkin desserts this weekend.  I wasn’t going to do it.  So, I made it twice…

And then I printed two non bake pumpkin recipes in preparation for Hurricane Nate and after making this Chocolate Pumpkin Crepe Cake realized how easy it was to make crepes…..and obviously I need them.

I wanted to make them healthier as it would have been so easy to use the heavy whipping cream and nutella for filling.

I made these yesterday morning and then again this morning.  I cut the recipe in half as I didn’t have an army to eat all of the crepes.

Healthy Pumpkin Crepes
This recipe makes about 6 crepes using 8 inch skillet.  Double the recipe if you need more.

For Batter:
1/2 Cup Whole Wheat Flour (I used King Arthur Flour)
1/2 Scoop Vanilla Protein Powder
1/4 tsp salt
1 Egg
1/2 tsp vanilla extract
2 tsp pure maple syrup
1 cup almond milk
1/2 tablespoon melted butter (set aside)

Filling:
8 oz vanilla greek yogurt
1/3 cup pure pumpkin puree
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp allspice
Pinch of Nutmeg

Optional toppings:
I used what I had…
Bananas, strawberries, chocolate chips, sliced almonds, melted chocolate.
(Whipped cream!!!!!)

The topping choices are pretty much limitless!

In medium bowl combine flour, protein powder, and salt.
In separate bowl whisk together egg, almond milk, vanilla extract, and maple syrup.
Gently pour and stir wet ingredients into dry ingredients and whisk until smooth.

Make filling while pan is heating up:
Whisk together yogurt and pumpkin until blended.  Whisk in spices.

Heat pan on stove and brush melted butter.  Pour a small amount of batter in pan carefully turning batter to cover entire pan surface until no longer runny.

Let cook for about 2-3 minutes and flip and cook for another 30 seconds.

Put cooked crepes on a sheet pan lined with parchment paper.

When cooled fill each crepe and top with extra melted chocolate.

Verse 4 stuck out.  One thing have I desired: that I may dwell in the house of the LORD all of my life to behold the beauty of the LORD.  That reminds me of another favorite from Philippians 3.

“BUT WHAT THINGS WERE GAIN TO ME, THOSE I COUNTED LOSS FOR CHRIST.  YEA DOUBTLESS, AND I COUNT ALL THINGS BUT LOSS FOR THE EXCELLENCY OF THE KNOWLEDGE OF CHRIST JESUS MY LORD: FOR WHOM I HAVE SUFFERED THE LOSS OF ALL THINGS, AND DO COUNT THEM BUT DUNG, THAT I MAY WIN CHRIST…”
– PHILIPPIANS 3:7-8

Things I thought added to my life….things I thought were gain…when I lost them I count it as loss.  There is nothing to compare to knowing Jesus Christ.  What better love or relationship is there?  There is none better or wiser or more beautiful than to be in love with the creator of the whole world.  There is nothing better than His presence.  That’s where we can be found.  He talks about a secret place.  Go there.  Spend time with Him.  Be in His presence.  He restores our souls:  Psalm 23.
